java.sql.Timestamp extends java.util.Date. You can do:

String s = new SimpleDateFormat("MM/dd/yyyy").format(myTimestamp);

Or to also include time:

String s = new SimpleDateFormat("MM/dd/yyyy HH:mm:ss").format(myTimestamp);
